The Team Behind Nocino Launches 'Stübli' - An Everyday Swiss Steakhouse & Fondue Destination in Kennedy Town​

Kennedy Town is about to get a little more Swiss. Set to officially open its doors on May 1 at 39–41 Cadogan Street, Stübli (pronounced Shtoo-blee) is a cosy, unpretentious new steakhouse and fondue restaurant. Opening right next door is the fifth location of its beloved sister concept, Nocino. Together, they form a unique dual dining destination that celebrates two distinct sides of Switzerland: the hearty, Alpine comfort of the German-speaking North, and the rustic, Mediterranean warmth of the Italian-speaking South. 



Stübli: The "Cozy Little Room" Born from Bernese Heritage 

Head Chef and Founder Matthew Ziemski developed Stübli to deeply honour his family's roots in Bern. "Growing up, every family trip to Switzerland meant stopping at a local Stübli — which literally translates to a 'cozy small room' — for fondue and Rösti," Matthew recalls. "It's where families gather unhurriedly over good wine and great food." 

The idea to bring this concept to Hong Kong sparked when Nocino introduced a limited-time Christmas cheese fondue. It proved so wildly popular that guests were genuinely disappointed when it left the menu. "We realised there was a massive gap in the market," explains Matthew. "Our goal with Stübli is to recreate that authentic Alpine warmth, of ering a cozy room where you can enjoy an af ordable, quality steak and Swiss comfort food any day of the week, without waiting for a special occasion."



Steaks the "Swiss Way" & Playful Fondues 

Stübli leads with high-quality, accessibly priced steaks. Featuring Australian Wagyu, UK Pork Tomahawk, and Dutch Rose Veal Medallions, the meats are all cooked the traditional "Swiss way": pan-fried in browned butter, garlic, and herbs, then finished with rich housemade sauces. 


Cheese fondue is the second culinary pillar. Alongside the Classic Half-Half (Gruyère and Emmental), the menu introduces luxurious modern twists like the Lobster Thermidor Fondue and a Summer Black Truffle Fondue. To make the dining experience highly interactive, Stübli is bringing the traditional "Oops, I lost my bread!" fondue rules to Hong Kong — if guests drop their bread in the sharing pot, they must face playful "punishments" like buying everyone a drink or kissing their neighbour!



A Rustic Alpine Vibe & Bespoke Art 

Designed to evoke a rustic Alpine dining room, the space features bespoke ash and pine carpentry by Hong Kong studio Awwwcreates. The most striking visual anchor is a feature wall displaying 16 genuine Swiss cow bells. Local artist Cath Love has also created custom paintings featuring Matthew's adopted Bernese Mountain Dog, along with a fun comic book for guests explaining fondue history and etiquette. 


Nocino Kennedy Town: A New À La Carte Menu Inspired by Ticino 

Opening right next door is Nocino's highly anticipated fifth location. While Stübli channels the German-speaking Alps, Nocino continues to celebrate the "Grotto-style" dining of Ticino, Switzerland's Italian-speaking canton famous for its lakes, palm trees, and rustic, generous cuisine. 


To celebrate the Kennedy Town launch, Nocino is rolling out an exclusive new à la carte menu. Taking a cue from their recent Hollywood Road opening, this new branch will feature a "Weekly Blackboard Special," allowing the kitchen team to rotate fresh, seasonal ingredients and showcase lesser-known Northern Italian and Swiss-Italian regional flavours. Nocino will carry its original warm design DNA and signature pendant lights, ensuring the beloved neighbourhood pasta bar feel remains intact.
