The Opposites Turns Cinema and Sound Into Cocktails This Summer

A new seasonal menu of four drinks inspired by film, music and flavour, crafted by World Class champions Antonio Lai and Samuel Kwok
This summer, Tastings Group’s The Opposites is launching a brand new seasonal cocktail menu, featuring four new concoctions designed and crafted by mixology veterans Antonio Lai and Samuel Kwok. The new crafted tipples highlight contemporary twists on classic cocktails, together with a vibrant showcase of familiar Asian flavour profiles, are shaken and stirred for cocktail lovers all summer long.
Co-founded by two World Class champions Antonio Lai and Samuel Kwok, The Opposites continues to push the envelope in the local mixology industry, setting the bar high into every single cocktail concoction designed and crafted from the cocktail destination. Through endless creativity, sound techniques and flair for theatrical presentation, The Opposites strives to balance flavour profiles, while showcasing magnitude and intensity of each, into each designed tipple that impresses sensations from palate to palette.

The new season introduces four new cocktails joining the ranks of the regular beverages on offer. Among them is Rhapsody in Blue (HK$140) , a contemporary reinterpretation of the classic Blood and Sand, synonymous with the 1922 motion picture. The original film features a village boy who rises to become Spain’s greatest matador while torn between two love interests. The film is accompanied with the great composer George Gershwin’s Rhapsody in Blue, mirroring the energy of early 20th century New York City, and coincidentally imbued with the musicality in its rhythms that mirror the dramatic arc of the film. It is the same dynamics of the popular music piece that resound on the range of sensations to be felt in this cocktail, where glutinous rice pu-erh is paired with clarified blueberries and balsamic vinegar, accented with a complex profile of liquors such as Toki Soju Black Label, Yuk Bing Siu, Maraschino and Pedro Ximenez Sherry, further enriching the complexity that unfolds between sips.

Continuing on reinventing classics, the Teahouse Old Fashioned (HK$140) presents a new interpretation to the spirit-forward cocktail. Infused with Narcissus tea-infused cognac and sweet winter melon tea syrup, the harmonious creation brings homage to the zen ceremonies of tea-preparation at the quiet teahouse setting, while respecting the sweetness of traditional herbal tea and an ultimate showcase of Hong Kong’s East-Meets-West identity. A touch of Grapefruit & Walnut bitters and candied tangerine resounds the fruitiness of the classic with a touch of surprise from the beginning down to the last sip.

Glowing of the summer sun marks the presentation of Smooth Operator (HK$140), a contemporary riff of the Martinez cocktail. Traditions dictate a smooth gin as the base spirit, The Opposites’ new interpretation lends the Toki Soju Gold Label accented with Baldoria Blanco as well as Papaya-Corn Liqueur and Orange Bitters. The combination of golden fruits adds a golden hue to the cocktail, one that exudes endearing complexity of aroma, flavours, and textures, brought forth by this new creation.

For a playful spirit-free alternative, Walking On Sunshine (HK$120) celebrates a stimulating range of flavours, from tangy-sweet lacto-fermented carrots to zesty calamansi limes; to herbaceous Nasturtium and a generous pour of Almave Ambar Non-Alcoholic Blue Agave Spirit. The rich botanical profile stays vivid and refreshing from start to finish, with a deliciously complex sensation down to the last drop. Guests can also opt for a spirited version with the addition of Reposado Tequila (HK$140) .
