Quinary Introduces “The Five Senses: Flavour”

A segment in a longstanding cocktail series that explores taste as memory,

heritage, and the quiet imprint of Hong Kong


HONG KONG [Friday, 27 November]—FOR IMMEDIATE RELEASE. Following the debut of The Five Senses: Texture last year, which explored the tactile dimension of cocktail experience, Quinary now continues its multisensory progression with the introduction of The Five Senses: Flavour. Launching as a collection of eight new cocktails, the series shifts focus from the physical to the internal by asking not

how a drink feels, but how it lingers with you.


Where Texture highlighted the impact of sensory surface and touch, Flavour traces how taste can trigger memory, identity and emotional recall. Rather than drawing from classic recipes, the team looked inward.

Each cocktail is based on a personal story shared by a Quinary bartender stemming from moments tied to Hong Kong’s everyday rhythm, from late-night food rituals and temple traditions to coastal stillness and neighbourhood habits. In this iteration, flavour is treated as a reflection of experience.


SERIES HIGHLIGHTS

Continuing the narrative structure introduced in The Five Senses: Texture, this edition presents eight cocktails, each priced at HK$150 per glass, exploring flavour through real memories shared by Quinary’s bartenders. Rather than recreating classic profiles, the drinks draw from personal stories rooted in Hong Kong’s culture—from traditional wellness rituals to neighbourhood culinary customs, historical recollections, and quiet moments of reflection.


Cheeky Float blends Two Moons Five Flowers Tea Gin, fresh sugar cane juice, lime and homemade

ginger beer, inspired by the herbal tea in Central that bartenders often turn to while navigating the pace and elevation of Hollywood Road. Wish & Wonder uses spices-infused Tanqueray Gin, Rice Bianco, Rice Secco, Malibu, cedarwood tincture and saline solution, referencing Wong Tai Sin Temple where the scent of incense and moments of fortune mirror the blend of effort and luck often needed in competition settings.


The Heirloom combines Ketel One Vodka, plum kasuzuke, lemon juice, Japanese apple juice, Ming River Baijiu and saline solution, based on a true story of Tai Po’s pearl-diving past where a young man discovered three pearls and gifted them to his mother. Little Nepal incorporates maca root-infused Hennessy VSOP, cumin, caraway and fennel seed-infused white cacao, grape liquor, fermented rice wine, cream, sugar and a spice mix tincture, inspired by the Nepalese community in Jordan and their enduring

contribution to Hong Kong’s cultural and culinary landscape.

Soupreme is built from sesame fat-washed Ketel One Vodka, pepper shrub, clarified tomato juice, lantern pepper-infused Tio Pepe Fino Sherry and shiitake mushroom syrup, modelled on the mock shark’s fin soup recommended to guest bartenders exploring Temple Street’s local cuisine. O Venice! features shrimp oil fat-washed Ocho Plata Tequila, Sichuan pepper-infused Montelobos Espadin Mezcal, strawberry Campari, crab vinegar pickled juice, clarified clamato juice and shiso tincture, inspired by Tai O which is often referred to as Hong Kong’s own Venice, known for its seafood traditions and slower pace of life.


Ever After blends pumpkin seed-infused Planetary 3 Stars White Rum, tropical fruit mix and Empirical

The Plum, paying homage to the late-night tong sui (sweet soup) tradition in Kowloon City and the act of sharing dessert to close the evening. The series concludes with Maritime Bay, made with Talisker 10YO Whisky, nori-infused Carpano Classico, cold brew gunpowder oolong cordial, herbs tincture and saline solution, inspired by after-work walks along the Tuen Mun shoreline, where the quiet sea breeze offers a moment of reflection.

As with past series, Flavour is as part of an ongoing conversation between the bar and its drinkers. The collection invites reflection on how small tastes can carry larger stories, and how even the most fleeting flavour has the potential to endure.
