Emmer Pizza — Hong Kong’s only pizzeria crafting gourmet pizzas with ancient emmer grain — is marking a milestone summer on two fronts: opening an Emmer restaurant at Hong Kong International Airport, and the launch of a bold new seasonal pizza created with a homegrown Hong Kong maker.
From today, travellers can experience Emmer’s signature freshly milled dough before they fly, while diners across the city can tuck into the new Peaches & Scream pizza, finished with Spark Crispy Chili Oil from A Spark of Madness.
Emmer Pizza, Bar & Café takes flight at Hong Kong International Airport
Emmer Pizzeria is bringing its naturally better pizza airside with the opening of Emmer Pizza, Bar & Café at Hong Kong International Airport. Located in Terminal 1 on the Departures Level (L7), after Departures (North) and next to the Sky Garden, the new restaurant is Emmer’s most ambitious space yet — a full bar, café and gelateria built for the rhythm of travel, open daily from 7:00am right through to 1:30am.

At its heart is a live dough room, where guests can watch emmer grain being milled into flour on-site in an Austrian-made stone mill and the dough hand-shaped through a viewing window — a theatre of craft rarely seen at an airport. It is a fitting showcase for the grain that started it all: an ancient wheat with roots dating back over 19,000 years, prized for its rich flavour, nutritional value and naturally lower gluten content, milled daily to preserve its essential oils.
Beyond the dough room, the venue houses a dedicated full service bar and gelateria, making it equally suited to a pre-flight feast, a quick espresso, or a celebratory glass before boarding.
The bar pours an exclusive list of airport-only cocktails created in the spirit of the journey, including:
Red-eye Recovery - burrata-infused tequila, tomato juice, basil and a Bloody Mary mix, finished with a burrata chip
Tailwind Flip - cognac, Kahlúa, egg white and cinnamon
Transatlantic Old Fashioned - rye, amaro and sweet vermouth
Pushback - vodka, clarified apple and grapefruit soda
On The Tarmac - Irish whiskey, Cointreau and barley syrup
Control Tower - white rum, amaro, lime juice and pineapple soda
Zero-proof travellers are equally well served, with thoughtful no-alcohol creations such as Proving Time (matcha green tea, barley syrup, lime juice and soda) and Starter Crumb (sourdough hydrosol, orgeat, verjus, lime zest, cinnamon and soda) — a nod to the bakery at the brand’s core. The full pizza menu, signature happy hour and grab-and-go favourites round out the offering.
Peaches & Scream: a summer pizza with A Spark of Madness

Emmer is turning up the heat for summer with Peaches & Scream (HK$178), a sweet-meets-savoury seasonal pizza available from 9 June. Sweet summer peaches meet smoky bacon, sweetcorn and a duo of scamorza and mozzarella on Emmer’s signature crunchy, billowing crust, finished with peppery rocket, all sitting on A Spark of Madness Crispy Chili Oil.
A Spark of Madness is the female-led Hong Kong maker celebrated for its handmade, all-natural condiments. Vegan and made locally with no preservatives, the Spark Crispy Chili Oil brings together a deep roster of chilli varieties. The result is a pizza that lives up to its name: sweet, smoky and just the right amount of mad. Add more Spark - as you dare!
