LeVeL33 & Carlitos Bring the Spirit of Spain to Marina Bay with a Brewery-Inspired Spanish Brunch Experience

From the lively tapas bars of Spain to the world’s highest urban microbrewery in a building,, LeVeL33 and Carlitos Casa de Comidas come together on Saturday, 13 June 2026, for a one-day-only Brewery-Inspired Spanish Brunch designed to transport guests through the flavours, music and convivial spirit of Spanish dining culture. Priced at SGD $88++ per guest for free-flow food, guests may top up an additional SGD $78++ for free-flow beverages featuring freshly brewed craft beers, sangrias and wines, all set against panoramic Marina Bay views and Latin beats.


Available from 12pm to 3pm, the brunch is led by Executive Chef Jake Kowalewski of LeVeL33 and Barcelona-born Chef Carlos Montobbio of Carlitos Casa de Comidas. Alongside a beverage programme and live music by DJ El-KING, known for his upbeat blend of cumbia, salsa and contemporary Latin rhythms, each chef will present five dishes that bring together Spanish flavours, brewery-inspired elements and produce-driven cooking.

For this collaboration, LeVeL33 presents a brewery-inspired take on Spanish cuisine paired with its ContemBrewery philosophy, where modern cooking techniques intersect with elements from the brewery. Highlight includes its Gambas al Ajillo served with fluffy beer flatbread, alongside Beer Battered Padrón Peppers topped with smoked garlic aioli, fried chorizo and chives. Guests can also look forward to signature favourites including the Charcoal-Grilled Fremantle Octopus and Westholme Wagyu Petite Tender. 


From Carlitos Casa de Comidas, Chef Carlos Montobbio brings an array of Spanish tapas rooted in the honest, no-frills tapas bars of Barcelona. A deeply personal and unfiltered expression of Spanish cooking, highlights include the Tapa de Paella featuring secreto ibérico and padrón peppers, the classic Gilda Pintxo with Spanish anchovy, and the must-have Croquetas de Chipirón (Baby Squid Croquetas). Ending on a sweet note is the Tarta de Queso — Carlitos’ take on a burnt Basque cheesecake tart served with raspberry and chilli jam.


The free-flow beverage programme features LeVeL33’s freshly brewed craft beers, including its Blond Lager, IPA and Stout, alongside White Sangria, Vermouth Bianco, Aperol Spritz with Cava, Spanish wines, juices, soft drinks, coffee and tea. 

“The food at Carlitos has always been very personal to me,” shares Chef Carlos Montobbio. “It is inspired by the kind of tapas I grew up eating in Spain — honest food made for sharing, long conversations and enjoying time around the table. Bringing that spirit into LeVeL33’s brewery setting has been really exciting for me.” 

Chef Jake adds, “There’s something naturally social about both Spanish tapas culture and brewery dining. Both are built around sharing food, drinks and time together, so this collaboration with Chef Carlos felt like a very organic fit.” 


Set high above Marina Bay, LeVeL33 x Carlitos offers an afternoon shaped by the flavours and spirit of Spanish dining culture — where tapas arrive steadily, drinks flow freely and conversation carries long into the day.
