
Keeping the legacy of secret societies alive, The Lobby Bar Hey Society (嘿社會) is a series of bar collaborations with the industry’s most notorious hedonists from all over the world. In this second series, The Warehouse Lobby Bar, Singapore, invites you to witness Saan Dhakal, famed for his award-winning cocktail programmes at The Old Man, Penicillin, Lockdown and more, and most recently the co-founder of the “sensibly contradictory” Courtroom, as he takes the stand for an exclusive one-night-only guest shift on Wednesday 27 November, from 8pm.
Known for his inventive approach to cocktail creation and commitment to sustainability both environmental and social, Saan will bring his extensive expertise and passion to Singapore, introducing a selection of signature cocktails from Courtroom’s newly released drink program, Cocktail Casefiles.
Saan Dhakal, Nepal-born and now based in Hong Kong, has over a decade of experience in hospitality that has made him a leader in the global bar scene. After moving to Hong Kong in 2014, he joined the founding team of The Old Man, helping it secure the No.1 spot on Asia’s 50 Best Bars in 2019 and No.9 worldwide. In 2020, Saan was part of the founding team for Penicillin, Hong Kong’s first close-loop cycle bar, where he served as Creative Beverage Director and championed sustainable practices alongside co-founders Agung & Laura Prabowo, landing the bar a spot on Asia’s 50 Best Bars list for four consecutive years, most recently at No.24 in 2024. This concept-driven bar drew attention for its dedication to sustainable practices, which Saan championed through innovative programs that redefined industry standards and continues to expand on in his new concept.
In August 2024, Saan launched Courtroom, a sensibly contradictory concept inspired by infamous court cases that blur the lines of convention. Known for its experimental mixology and commitment to social sustainability, Courtroom quickly made a name for itself. An array of sixteen cheekily-named, experimental cocktails and four equally inventive zero-proof mocktails make up the Cocktail Casefiles. This drinks program is an exploration of regional tastes, pushing the boundaries of mixology with ‘investigation-worthy’ concoctions that appeal to the senses.

The Alimony—a cheeky twist on the classic martini that mixes nutty mustard root-infused gin with earthy beetroot distillate, along with their house-made rose petal vinegar.
Cause Of Action—a refreshingly fizzy cocktail combining a Pink Peppercorn Pisco base with a zesty cucumber and grapefruit foam topped with nutty notes from aromatic clarified laksa leaves.
Habeas Corpus—a multi-layered cocktail marrying Sugar Snap Tequila, together with fenugreek distillate, mushroom-infused peach cordial for fresh vegetal notes, a fruity burst and a subtle umami finish.
Sworn Affidavit—accused of being both an espresso martini and an Irish coffee, this drink uses orange rum fat-washed with homemade buttercream then stirred with hazelnut eau de vie, cheese coffee liqueur, and a touch of Ratafia Rossi vermouth.
