Some wines are best enjoyed on their own, while others reveal their full character at the table. This April, LeVeL33 continues the  “6 Shades of Grapes” dinner series that puts the spotlight on a single grape varietal—here with a one-night-only Chardonnay pairing experience on 18 April 2026,  at 7pm. Featuring six distinct expressions of Chardonnay spanning France, Italy, New Zealand and South Africa, the six-course dinner offers a focused exploration of how the varietal evolves across regions, styles and winemaking approaches.


Priced at SGD $168++ per guest, the experience is structured as a progression—moving from Franciacorta Satèn and Champagne Blanc de Blancs to Chablis and New World expressions—revealing how one grape can shift from mineral and restrained to textured and expressive. Unlike traditional wine dinners that span multiple varietals, “6 Shades of Grapes” takes a deeper approach, presenting Chardonnay through a comparative tasting that brings nuance, terroir and technique into sharper focus.


Led by Founder Dr. Martin Bém, whose background bridges both brewing and beverage strategy, the dinner reflects a different approach to how wine is experienced alongside food—balancing structure, texture and flavour across each pairing.


Opening the evening is Italy’s most premium sparkling wine, a Franciacorta by Bellavista, led by the former winemaker of Dom Perignon featuring their vintage Satèn, defined by its softer effervescence and creamier texture, offering a more rounded expression of Chardonnay. This is followed by the Blanc de Blancs of the renowned Barons de Rothschild Champagne. On the other end of the spectrum, Neudorf’s Tiritiri Chardonnay from Nelson, New Zealand presents a more restrained, site-driven style—reflecting a fresher, mineral expression that speaks to the new wave of New World winemaking.


The food menu is built around precision pairing, with each course designed to reflect the structure and character of its accompanying Chardonnay. Seasonal ingredients such as asparagus, green apple, citrus and fresh herbs mirror the natural acidity and brightness of the wines, while premium produce—including Yarra Valley salmon roe, Kaluga caviar, Australian spanner crab and dry-aged Bangalow free-range pork—adds depth and texture across the progression. Rather than pairing broadly by protein, each dish is calibrated to complement the wine’s profile, from salinity and minerality to creaminess and weight.
